Shaded growth gives premium matcha its signature character. By gently limiting sunlight during the final weeks before harvest, the leaves develop a deeper color, a sweeter natural profile, and the richer umami that defines high-grade matcha. This slow-grown approach creates a velvety texture and a vibrant green hue.

Shading slows photosynthesis, prompting the leaves to produce higher concentrations of chlorophyll and L-theanine. Chlorophyll deepens the color, while L-theanine enhances sweetness and reduces bitterness. Shading also suppresses catechin formation, further softening bitterness. The result is a nutrient-rich leaf with more umami and a refined flavor profile made for true matcha.

Preparation

Prepare in
three steps.

Use water below boiling. Whisk until the powder is suspended and a fine foam forms.
